My favorite caramelized onions ever! For a little more crunch you can add another 5 to 10 minutes cooking time to the onions.
Such a nice sweet heat taste.
You can also use gluten free tortillas for a delicious gluten free meal.

Ingredients

6 Tablespoons Olive Fusion Chipotle Olive Oil
- 1 Tablespoon Olive Fusion Chipotle Rub

1 Tablespoon Olive Fusion Applewood Chipotle Rub
- 1 1/2 pounds boneless, skinless chicken breast
- 2 medium onions, halved and sliced lengthwise
- 1 red bell pepper sliced
- 8(8 inch)flour tortillas
- Salsa, for topping
- Guacamole, for topping
- Shredded iceberg lettuce, for topping
- Cheddar cheese, shredded, for topping
- Diced tomatoes, for topping
Directions
- In a large ziplock bag, combine 2 tablespoons chipotle olive oil, 1 tablespoon chipotle rub and chicken breast. Seal and coat the chicken breast. Place in refrigerator for minimum of 1 up to 8 hours.
- Heat 2 tablespoons of Chipotle oil in large skillet(med/high)add onions. Stir frequently for 10 minutes. Add 1 more tablespoon of chipotle olive oil, 1 tablespoon of applewood chipotle rub and and red peppers. Cook for 5 minutes until tender.
- Heat the grill to medium heat. Remove the meat from the marinade, place it on the grill, discard the marinade. Cook chicken until cooked through, about 5 minutes per side. Slice the chicken into strips.
- Wrap the tortillas in foil and warm them in the oven for 10 minutes.
- Serve with the warm tortillas and other accompaniments.
