It's time for summer and nothing is more perfect than shrimp on a BBQ!
Enjoy this delicious Mojito grilled shrimp on top of a salad with Persian Lime Olive Oil and Coconut Balsamic.
This salad is so tasty it makes you feel like you are sitting on the beach.

Ingredients
12 to 14 uncooked deveined peeled large shrimp

1/4 cup Olive Fusion Persian Lime Olive Oil

1 Tbs Olive Fusion Chipotle Honey

1 Tbs Olive Fusion Mojito Lime Seasoning

3 Tbs Olive Fusion Coconut Balsamic
3 ears fresh sweet corn, husks removed, cleaned
1/2 tsp kosher (coarse) salt
6 cups spring mix or chopped romaine lettuce
2 large tomatoes, cut into 8 wedges
1 small avocado, pitted, peeled and diced (3/4 cup)

Heat gas or charcoal grill.
Sprinkle shrimp evenly with Mojito Lime Seasoning; set aside. Place corn on grill over medium heat. Cover grill; cook 12 minutes, turning occasionally. Add shrimp to grill for the last six minutes of cooking time; turning once, until shrimp are pink. Cut kernels from ears of corn. In small bowl, stir Persian Lime Olive Oil, Chipotle Honey, salt, and Coconut Balsamic with whisk; set aside.
In large bowl, stir together shrimp, corn, lettuce and tomatoes; drizzle with dressing and toss well. Add avocado; toss gently. Serve on a plate, enjoy!
