A fall favorite with some mashed potatoes! This is not your grandma's meatloaf. I can say that because I'm a Grandma and my Granddaughter's LOVE this meatloaf recipe, no mushy meatloaf here!!!
Ingredients

1/4 cup Olive Fusion Neopolitan Herb Dark Balsamic

1/4 cup Olive Fusion Tuscan Herb Olive Oil

1 tbsp Olive Fusion Naples Seasoning

1 tsp Olive Fusion Organic Pennsylvania Pepper
1 tsp Salt
1 cup Panko Crumbs
1 cup Tomato Sauce
1 tbsp minced Garlic
1 tbsp minced Onion
1.5 lbs ground beef or turkey
2 cups baby Spinach - rinsed and dried
1 large egg - beaten

Preheat oven to 350*
In a large bowl mix all ingredients
Coat a casserole dish with Tuscan Herb Oil. Shape mixture into a loaf shape. Place mixture in the center of the casserole dish. Do not press down
Not a traditional meatloaf. It will have crispy outside and moist inside
Bake for 45 minutes or until a meat thermometer reaches 165* Remove from oven and let sit 5 minutes before serving

Left overs make a great sandwich
