I love green chili breakfast burritos, I could eat them every morning for breakfast and now I can with this delicious easy prep recipe!
I make a large batch when I have the time using Olive Fusion's Baklouti Green Chili Olive Oil. Roll them up, freeze them for future hurry up and get out the door healthy breakfasts!!!
They are also great for traveling or camping as long as you have a way to refrigerate and to warm them up.

1/4 cup Olive Fusion Baklouti Green Chili Olive Oil

2 Tbs Olive Fusion Butter Olive Oil
5 cups diced potatoes
2 to 3 cups breakfast links (I like Kiolbassa smoked meats) or your favorite bacon, add as much BACON as you want!!!
12 eggs scrambled
12 tortillas (I like Rudi's plain gluten free tortillas)
8oz package of cheddar cheese ( I like Violife 100% vegan cheddar cheese)

Add Olive Fusion Baklouti Green Chili Olive Oil to a large frypan, heat. Add potatoes, fry over med/high heat until crunchy. Remove from heat.
In a 2nd large fry pan add 1 Tbs Olive Fusion Butter Olive Oil. Heat to medium, add sausage and cook for 8 to 10 minutes.
Add sausage to cooked potatoes, stir, set aside.
Add 1 Tbs Olive Fusion Butter Olive Oil to empty sausage pan, heat. Add eggs and cook over medium heat until done.
Add cooked eggs and cheese to potatoes and stir over medium heat until cheese is melted, remove from heat.
Heat tortilla on a small plate in microwave for 10 seconds remove and place on a piece of plastic wrap, enough to wrap burrito completely. Fill the center of tortilla with the scramble mixture to make a nice size burrito that you can roll up. Once rolled, wrap with plastic wrap and repeat until all burritos are complete.
Recipe Note
You can eat them all within a few days or freeze a few in a Ziploc bag up to six months.
