A family favorite when a satisfying Mexican dish is needed. Try this healthy and fulfilling dish. It will soon become a favorite.
Ingredients

Olive Fusion Garlic Olive Oil

Olive Fusion Baklouti Green Chili Olive Oil

2 Tbsp Olive Fusion Chipotle Rub

1/2 tsp Mojo Seasoning
3 Tbsp All Purpose Flour
1/2 tsp Mexican Oregano
1/2 tsp Onion Powder
1/2 tsp Garlic Powder
1 tsp Salt
1 can Black Beans - drained and rinsed
2 cups Broth - we suggest vegetable
1.5 Lbs Chicken - diced
6-8 large Flour Tortillas
4 cups Mexican Blend Cheese-shredded
fresh Cilantro & diced tomatoes - optional
Directions
Sauce Preparation
Heat 3 Tbsp Garlic Olive Oil in a small sauce pan over medium-high heat
Add Flour & whisk together for 1 minute
Stir in Chipotle Rib, 1/2 tsp Garlic and 1/2 tsp Onion powders, 1/2 tsp Salt and Mexican Oregano
Gradually add broth whisking constantly to avoid lumps
Reduce heat and simmer for 15 minutes until thickened
Chicken preparation
Rinse and dice chicken
In a large saute pan heat 2-3 Tbsp Baklouti Green Chili Olive Oil over medium-high heat. Add Chicken, 1/2 tsp salt and Mojo Seasoning. Saute 8-10 minutes stirring occansionally until done
Remove from heat and set aside
Assembly
Use a large casserole dish ( 9X13 ), coat bottom with 1-2 Tbsp Baklouti Green Chili Olive Oil
On a large plate layout a tortilla. Spread 2 Tbsp sauce over top. Add beans down the middle. Place a large spoonful of chicken over beans. Sprinkle with 1/3 cup of cheese. Roll up and place in casserole dish.
Repeat with remaining ingredients. Placing in casserole dish side by side. Pour remaining sauce over top and spread evenly and cover with remaining cheese
Bake uncovered for 20 minutes at 350*. Remove and garnish with Cilantro and diced Tomato.
