Great cool weather, hearty soup. If you like mushrooms you will love the wild mushroom and sage olive oil with the porcini salt.
Satisfying meal for the whole family, great left overs.
Ingredients

60 ml Wild Mushroom & Sage Olive Oil
1 Tbsp Porcini Salt

3 Tbsp Vegetable Soup MIx
1 cup Brown or White Rice
1 tsp Salt
1 can Corn drained
2 cups Crispy Fried Onions ( Frenchs )
2 lbs Chicken Breast diced
2 large Carrots diced
8 cups Chicken Bouillon
Directions
In a pan saute Rice in Mushroom & Sage Olive Oil with diced Chicken for 10 minutes until browned
In a large pot add broth, salts, Vegetable Soup mix, diced carrot and corn. Stir, then mix in sauteed Rice and Chicken mixture. Stir together.
Simmer on low heat for 1 1/2 - 2 hours ( make sure rice is cooked )
Crock pot instructions - cook on low heat for 6 - 8 hours
Top with Crispy Onions
